For the Crust:
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 2 medium zucchinis, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, garlic, olive oil, oregano, basil, paprika, salt, and black pepper. Toss to coat evenly.
- Transfer the mixture to the prepared baking dish and spread it out in an even layer.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven and sprinkle with feta cheese and fresh parsley before serving.
