Mediterranean Chicken Zucchini Bake – Low-Carb Dinner

A flavorful and healthy low-carb dinner featuring tender chicken, zucchini, and Mediterranean spices baked to perfection.

For the Crust:

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 2 medium zucchinis, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, garlic, olive oil, oregano, basil, paprika, salt, and black pepper. Toss to coat evenly.
  3. Transfer the mixture to the prepared baking dish and spread it out in an even layer.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Remove from the oven and sprinkle with feta cheese and fresh parsley before serving.

Notes

You can customize the seasonings to taste.
