Maraschino Cherry Chocolate Chip Cookies

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped maraschino cherries, well-drained

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually blend in the flour mixture. Fold in chocolate chips and chopped cherries.
  5. Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 9-11 minutes or until golden brown. Cool on wire racks.
