Maraschino Cherry Chocolate Chip Cookies

For the Crust:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped maraschino cherries, drained and patted dry

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla and almond extracts.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing just until combined.
  5. Fold in chocolate chips and chopped maraschino cherries.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
  7. Bake for 9-11 minutes or until edges are lightly golden. Let cool on baking sheets for 2 minutes before transferring to wire racks.
