- 1/2 cup (1 stick) unsalted butter, melted and cooled
- 1 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup peeled and chopped apple (about 1 medium apple)
- 1/2 cup chopped walnuts or pecans (optional)
- For the glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk or apple cider
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Line an 8×8 inch baking pan with parchment paper or foil, leaving an overhang for easy removal. Lightly grease the parchment or foil.
- In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the egg and vanilla and whisk until combined.
- In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped apple and nuts, if using.
- Spread the batter into the prepared pan. It will be thick, so you may need to use a spatula to spread it evenly.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Let the blondies cool completely in the pan on a wire rack.
- To make the glaze, whisk together the powdered sugar, 1 tablespoon of milk or cider, and vanilla. Add more liquid if needed to reach a drizzling consistency.
- Drizzle the glaze over the cooled blondies. Let the glaze set before cutting into squares.
Notes
For best results, use a firm apple like Granny Smith or Honeycrisp. Store blondies in an airtight container at room temperature for up to 3 days. The glaze can be omitted for a less sweet treat.
