Apple Blondies

These easy apple blondies are the perfect fall dessert. They’re loaded with chunks of fresh apple and warm spices, and topped with a simple vanilla glaze.

Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup peeled and chopped apple (about 1 medium apple)
  • 1/2 cup chopped walnuts or pecans (optional)
  • For the glaze:
  • 1/2 cup powdered sugar
  • 12 tablespoons milk or apple cider
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Line an 8×8 inch baking pan with parchment paper or foil, leaving an overhang for easy removal. Lightly grease the parchment or foil.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the egg and vanilla and whisk until combined.
  3. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the chopped apple and nuts, if using.
  5. Spread the batter into the prepared pan. It will be thick, so you may need to use a spatula to spread it evenly.
  6. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let the blondies cool completely in the pan on a wire rack.
  8. To make the glaze, whisk together the powdered sugar, 1 tablespoon of milk or cider, and vanilla. Add more liquid if needed to reach a drizzling consistency.
  9. Drizzle the glaze over the cooled blondies. Let the glaze set before cutting into squares.

Notes

For best results, use a firm apple like Granny Smith or Honeycrisp. Store blondies in an airtight container at room temperature for up to 3 days. The glaze can be omitted for a less sweet treat.
