Mango Blueberry Salad with Simple Vinaigrette

A fresh and vibrant salad combining ripe mango, blueberries, and spinach with walnuts, feta cheese, and a simple vinaigrette dressing.

Ingredients

  • 6 cups spinach/arugula mix, about 6 ounces
  • 1 large fresh mango, diced
  • 1 cup walnuts, chopped
  • 3 dates, pitted and chopped (optional)
  • 1 cup fresh blueberries
  • 1/2 cup feta cheese
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons dijon mustard
  • 4 tablespoons honey
  • dash of salt
  • freshly ground black pepper

Instructions

  1. Wash and drain the spinach and arugula mix and put in a bowl.
  2. Dice the mango, walnuts, and dates and add to the salad bowl.
  3. Add the blueberries to the bowl, and sprinkle the feta cheese over the salad.
  4. Whisk the dressing ingredients together in a small bowl until combined. You can also use an immersion blender.
  5. Add the dressing to the salad and enjoy!

Notes

The salad tastes best when consumed fresh. Store any leftover dressing in the refrigerator for up to 3 days. Choose a ripe mango that gives slightly when pressed for the best flavor.
