Magic Pecan Cheesecake Bars

A delightful dessert with a creamy cheesecake layer and a crunchy pecan topping, all on a buttery shortbread crust.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 2 tablespoons unsalted butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Mix 1 cup flour, 1/2 cup softened butter, and 1/4 cup sugar until crumbly. Press into the bottom of the prepared pan. Bake for 15 minutes.
  3. Beat cream cheese, 1/2 cup sugar, egg, and vanilla until smooth. Spread over the baked crust.
  4. Combine pecans, brown sugar, and 2 tablespoons melted butter. Sprinkle over the cream cheese layer. Bake for 25 minutes or until set. Cool completely before cutting into bars.
