Luxurious Mango Mousse Cheesecake

A creamy and airy mango mousse layered on a classic cheesecake base, creating a delightful tropical dessert.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 ripe mangoes, pureed
  • 1/4 cup powdered sugar
  • 1 tbsp gelatin, dissolved in 2 tbsp warm water

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Chill for 15 minutes.
  2. Beat cream cheese, granulated sugar, and vanilla until smooth. Spread over the crust and refrigerate for 30 minutes.
  3. Whip heavy cream with powdered sugar until stiff peaks form. Fold in mango puree and dissolved gelatin.
  4. Pour mango mousse over the cheesecake layer and refrigerate for at least 4 hours or until set.
  5. Garnish with fresh mango slices before serving.

Notes
