For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 ripe mangoes, pureed
- 1/4 cup powdered sugar
- 1 tbsp gelatin, dissolved in 2 tbsp warm water
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Chill for 15 minutes.
- Beat cream cheese, granulated sugar, and vanilla until smooth. Spread over the crust and refrigerate for 30 minutes.
- Whip heavy cream with powdered sugar until stiff peaks form. Fold in mango puree and dissolved gelatin.
- Pour mango mousse over the cheesecake layer and refrigerate for at least 4 hours or until set.
- Garnish with fresh mango slices before serving.

You can customize the seasonings to taste.
