For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1/3 cup plain yogurt
- 1 tsp vanilla extract
- 1 cup chopped walnuts
- 1/2 cup caramel sauce, plus extra for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in mashed bananas, yogurt, and vanilla.
- Gradually blend in the flour mixture until just combined. Fold in chopped walnuts.
- Pour half the batter into the prepared pan. Drizzle with half the caramel sauce. Add remaining batter and swirl with a knife. Top with remaining caramel swirl.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack. Drizzle with additional caramel before serving.
