For the Crust:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts
- 1/2 cup buttermilk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Mix in mashed bananas. Gradually add the flour mixture, alternating with buttermilk, until just combined.
- Fold in chopped walnuts. Pour batter into the prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool before serving.
