Luscious Lemon Zucchini Bread

A moist and flavorful zucchini bread with a bright lemon twist, perfect for breakfast or a snack.

For the Crust:

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix oil, eggs, lemon juice, lemon zest, and vanilla. Stir in grated zucchini.
  4. Combine wet and dry ingredients until just blended. Pour batter into the prepared loaf pan.
  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
