Luscious Lemon Zucchini Bread

A moist and flavorful zucchini bread with a bright lemon twist, perfect for breakfast or a snack.

For the Crust:

  • 2 cups grated zucchini
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar, oil, eggs, lemon zest, lemon juice, and vanilla until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined. Fold in the grated zucchini.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
