Luscious Lemon Heaven Cookies

Soft, chewy lemon cookies with a heavenly citrus flavor and a delicate glaze.

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add egg, lemon zest, lemon juice, and vanilla extract; mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Drop dough by rounded tablespoons onto prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
  7. For the glaze, whisk powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.
