For the Crust:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy. Add egg, lemon zest, lemon juice, and vanilla extract; mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop dough by rounded tablespoons onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
- For the glaze, whisk powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.
