Luscious Lemon Heaven Cookies

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, lemon zest, lemon juice, and vanilla.
  4. Gradually blend in the flour mixture until just combined. Drop by rounded tablespoons onto prepared baking sheets.
  5. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.
  6. For glaze, whisk powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.
