For the Crust:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, lemon zest, lemon juice, and vanilla.
- Gradually blend in the flour mixture until just combined. Drop by rounded tablespoons onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.
- For glaze, whisk powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.
