Luscious Lemon Cream Cheese Muffins

Delightfully tangy and creamy muffins with a perfect balance of lemon and cream cheese.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, eggs, milk, lemon juice, and lemon zest until well combined.
  4. Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  6. Fill each muffin cup halfway with batter, add a spoonful of cream cheese mixture, then top with remaining batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool for 5 minutes before transferring to a wire rack.
