			For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup milk
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix melted butter, eggs, milk, lemon juice, and lemon zest until well combined.
- Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- Fill each muffin cup halfway with batter, add a spoonful of cream cheese mixture, then top with remaining batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cool for 5 minutes before transferring to a wire rack.
