Luscious Country Apple Fritter Cake

A warm, spiced cake with tender apple chunks and a sweet glaze, reminiscent of classic apple fritters.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 medium apples, peeled and diced
  • 1 cup powdered sugar
  • 23 tablespoons milk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In a large bowl, cream butter and sugar until light. Beat in eggs one at a time, then stir in vanilla.
  4. Alternately add flour mixture and milk to butter mixture, mixing until just combined. Fold in diced apples.
  5. Spread batter into prepared pan. Bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Whisk powdered sugar and milk to make a glaze. Drizzle over cooled cake before serving.

Notes

You can customize the seasonings to taste.
