Luscious Coffee Cream Cheese Muffins

Moist coffee-infused muffins swirled with a rich cream cheese filling and topped with a sweet streusel crunch.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp instant coffee granules
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 2 tbsp cold butter, cubed
  • 1/2 tsp ground cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, coffee granules, baking powder, and salt. In another bowl, mix milk, oil, egg, and vanilla. Combine wet and dry ingredients until just blended.
  3. In a medium bowl, beat cream cheese and powdered sugar until smooth. For streusel, mix brown sugar, 1/4 cup flour, cold butter, and cinnamon until crumbly.
  4. Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter. Sprinkle streusel over each muffin.
  5. Bake for 20-25 minutes until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

You can customize the seasonings to taste.
