			For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp instant coffee granules
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/2 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 2 tbsp cold butter, cubed
- 1/2 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, coffee granules, baking powder, and salt. In another bowl, mix milk, oil, egg, and vanilla. Combine wet and dry ingredients until just blended.
- In a medium bowl, beat cream cheese and powdered sugar until smooth. For streusel, mix brown sugar, 1/4 cup flour, cold butter, and cinnamon until crumbly.
- Fill muffin cups halfway with batter. Add a spoonful of cream cheese mixture, then top with remaining batter. Sprinkle streusel over each muffin.
- Bake for 20-25 minutes until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack.
