For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 large egg
- 3/4 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups diced ripe pears
- 1/4 cup brown sugar (for streusel)
- 1/4 cup all-purpose flour (for streusel)
- 1 tsp ground cinnamon (for streusel)
- 2 tbsp cold unsalted butter, cubed (for streusel)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix melted butter, egg, milk, and vanilla extract. Pour into dry ingredients and stir until just combined.
- Fold in diced pears. Spoon batter into muffin cups, filling each about 2/3 full.
- For the streusel, mix brown sugar, flour, and cinnamon. Cut in cold butter until crumbly. Sprinkle over muffin batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes before serving.
