			- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 3/4 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups peeled and diced pears
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup cold unsalted butter, cubed
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. In another bowl, mix melted butter, eggs, milk, and vanilla. Combine wet and dry ingredients, then fold in diced pears.
- For the streusel, mix brown sugar, flour, cinnamon, and cold butter with a fork until crumbly.
- Fill muffin cups 2/3 full, sprinkle generously with streusel, and bake for 20-25 minutes until a toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to a wire rack.
