Luscious Carrot Bars

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/4 cups vegetable oil
  • 2 cups grated carrots
  • 1 cup chopped walnuts
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. Add eggs and oil, mixing until combined. Stir in carrots and walnuts.
  3. Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  4. Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle glaze over cooled bars. Cut into squares and serve.
