- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 4 large eggs
- 1 1/4 cups vegetable oil
- 2 cups grated carrots
- 1 cup chopped walnuts
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. Add eggs and oil, mixing until combined. Stir in carrots and walnuts.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle glaze over cooled bars. Cut into squares and serve.
