For the Crust:
- 1 box brownie mix (plus required oil, eggs, and water)
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup caramel sauce
- 1/4 cup chopped pecans
- Whipped cream for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a muffin tin with 12 paper liners.
- Prepare brownie mix according to package directions. Divide batter evenly among muffin cups, filling each about 1/3 full. Bake for 12 minutes.
- While brownies bake, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing until combined.
- Remove partially baked brownies from oven. Spoon cheesecake mixture over each brownie base, then sprinkle with chocolate chips.
- Bake for 18-20 minutes until cheesecake is set. Cool completely, then refrigerate for at least 2 hours.
- Before serving, drizzle with caramel sauce, sprinkle with pecans, and top with whipped cream.
