Lemon Zucchini Heaven Bread

For the Crust:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup grated zucchini
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter
  • 1 large egg
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix grated zucchini, sugar, melted butter, egg, lemon juice, lemon zest, and vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick inserted comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
