Lemon Zucchini Heaven Bread

For the Crust:

  • 2 cups grated zucchini
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugars, oil, eggs, lemon juice, lemon zest, and vanilla until smooth.
  4. Stir the wet ingredients into the dry ingredients until just combined. Fold in grated zucchini.
  5. Pour batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick comes out clean.
  6. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
