For the Crust:
- 1/2 cup unsalted butter, melted and cooled
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/3 cup granulated sugar
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1/2 cup fresh raspberries, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease and flour a madeleine pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy. Mix in lemon zest and vanilla.
- Gently fold in the dry ingredients, then the melted butter. Fold in chopped raspberries.
- Spoon batter into madeleine molds, filling each about 3/4 full.
- Bake for 10-12 minutes until edges are golden. Cool in pan for 2 minutes, then transfer to a rack.
