For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup raspberry jam
- 1/2 cup fresh raspberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
- Bake crust for 10 minutes, then let cool slightly.
- In a bowl, beat cream cheese and 1/2 cup sugar until smooth. Add lemon juice, zest, vanilla, and eggs, mixing until well combined.
- Pour cheesecake filling over the crust. Drop spoonfuls of raspberry jam on top and swirl with a knife. Scatter fresh raspberries over the surface.
- Bake for 25-30 minutes until set. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
