Lemon Raspberry Cheesecake Crunch Bars

A delightful dessert combining tangy lemon, sweet raspberries, and creamy cheesecake with a crunchy graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup raspberry jam
  • 1/2 cup fresh raspberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan to form the crust.
  3. Bake crust for 10 minutes, then let cool slightly.
  4. In a bowl, beat cream cheese and 1/2 cup sugar until smooth. Add lemon juice, zest, vanilla, and eggs, mixing until well combined.
  5. Pour cheesecake filling over the crust. Drop spoonfuls of raspberry jam on top and swirl with a knife. Scatter fresh raspberries over the surface.
  6. Bake for 25-30 minutes until set. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
