			For the Crust:
- 1 1/2 cups shelled pistachios, finely crushed
- 1/4 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 1 tsp vanilla extract
- 1 can cherry pie filling
- Chopped pistachios for garnish
Instructions
1. Prepare the Crust:
- Combine crushed pistachios, melted butter, and sugar. Press into a 9-inch springform pan and chill for 30 minutes.
- Beat cream cheese and powdered sugar until smooth. Add heavy cream and whip until thick. Fold in lemon and lime zest, juices, and vanilla.
- Spread filling over the chilled crust. Refrigerate for at least 4 hours or until set.
- Top with cherry pie filling and garnish with chopped pistachios before serving.
