Lemon-Lime Cherry Pistachio Cheesecake

A refreshing and nutty no-bake cheesecake with a zesty citrus twist and a sweet cherry topping on a pistachio crust.

For the Crust:

  • 1 1/2 cups shelled pistachios, finely crushed
  • 1/4 cup melted butter
  • 2 tbsp sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • Zest and juice of 1 lemon
  • Zest and juice of 1 lime
  • 1 tsp vanilla extract
  • 1 can cherry pie filling
  • Chopped pistachios for garnish

Instructions

1. Prepare the Crust:

  1. Combine crushed pistachios, melted butter, and sugar. Press into a 9-inch springform pan and chill for 30 minutes.
  2. Beat cream cheese and powdered sugar until smooth. Add heavy cream and whip until thick. Fold in lemon and lime zest, juices, and vanilla.
  3. Spread filling over the chilled crust. Refrigerate for at least 4 hours or until set.
  4. Top with cherry pie filling and garnish with chopped pistachios before serving.

Notes

You can customize the seasonings to taste.
