- 1 1/2 cups crushed graham crackers
- 1/2 cup finely chopped pistachios
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1/4 cup sour cream
- 1 tsp vanilla extract
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 1/2 cup cherry preserves, warmed
Instructions
- Preheat oven to 325°F. Mix crushed graham crackers, pistachios, and melted butter. Press into a 9-inch springform pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, lemon and lime zest and juice.
- Pour filling over crust. Drop spoonfuls of cherry preserves on top and swirl with a knife.
- Bake for 45-50 minutes until edges are set and center is slightly jiggly. Cool completely, then refrigerate for at least 4 hours before serving.
