Lemon-Lime Cherry Pistachio Cheesecake

A refreshing and nutty cheesecake with a zesty lemon-lime twist and a sweet cherry swirl, all nestled in a crunchy pistachio crust.

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup finely chopped pistachios
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • Zest and juice of 1 lemon
  • Zest and juice of 1 lime
  • 1/2 cup cherry preserves, warmed

Instructions

  1. Preheat oven to 325°F. Mix crushed graham crackers, pistachios, and melted butter. Press into a 9-inch springform pan to form the crust.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, lemon and lime zest and juice.
  3. Pour filling over crust. Drop spoonfuls of cherry preserves on top and swirl with a knife.
  4. Bake for 45-50 minutes until edges are set and center is slightly jiggly. Cool completely, then refrigerate for at least 4 hours before serving.
