Lemon-Lime Cherry Pistachio Cheesecake

A refreshing and nutty no-bake cheesecake with a zesty citrus twist and a sweet cherry topping on a pistachio crust.

For the Crust:

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup finely chopped pistachios
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tbsp lime zest
  • 1 tsp vanilla extract
  • 1 can cherry pie filling

Instructions

1. Prepare the Crust:

  1. Combine graham crackers, pistachios, and melted butter; press into a 9-inch springform pan and chill.
  2. Beat cream cheese and sugar until smooth. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
  3. Stir in lemon juice, lime zest, and vanilla. Spread over crust and refrigerate for at least 4 hours.
  4. Top with cherry pie filling before serving.
