For the Crust:
- 1 1/2 cups crushed graham crackers
- 1/2 cup finely chopped pistachios
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 cup heavy cream
- 2 tbsp lemon juice
- 1 tbsp lime zest
- 1 tsp vanilla extract
- 1 can cherry pie filling
Instructions
1. Prepare the Crust:
- Combine graham crackers, pistachios, and melted butter; press into a 9-inch springform pan and chill.
- Beat cream cheese and sugar until smooth. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
- Stir in lemon juice, lime zest, and vanilla. Spread over crust and refrigerate for at least 4 hours.
- Top with cherry pie filling before serving.
