For the Crust:
- 3 large eggs, separated
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/4 cup all-purpose flour
- 1 1/2 cups whole milk
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (160°C). Grease an 8-inch square baking dish.
- In a bowl, beat egg yolks and sugar until light and fluffy. Mix in melted butter, flour, milk, lemon juice, zest, salt, and vanilla.
- In a separate bowl, beat egg whites until stiff peaks form. Gently fold into the lemon mixture.
- Pour batter into prepared dish. Bake for 40-45 minutes until golden and set.
- Let cool before slicing. Serve chilled or at room temperature.
