Lemon Custard Cake

For the Crust:

  • 3 large eggs, separated
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 1 1/2 cups whole milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (160°C) and grease an 8-inch square baking dish.
  2. In a large bowl, beat egg yolks and sugar until light and fluffy. Gradually mix in melted butter, flour, milk, lemon juice, lemon zest, salt, and vanilla extract.
  3. In a separate bowl, beat egg whites until stiff peaks form. Gently fold the egg whites into the yolk mixture until just combined.
  4. Pour the batter into the prepared baking dish. Place the dish in a larger roasting pan and fill the roasting pan with hot water halfway up the sides of the baking dish.
  5. Bake for 40-45 minutes or until the top is golden and the center is set. Let cool before serving.

Notes

You can customize the seasonings to taste.
