Lemon Cream Brûlée Bars with Crisp Caramel Topping

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup unsalted butter, chilled
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/4 cup heavy cream
  • 1/2 cup granulated sugar (for topping)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix flour and powdered sugar in a bowl. Cut in butter until mixture resembles coarse crumbs. Press into the prepared pan and bake for 15 minutes.
  3. Whisk eggs, granulated sugar, lemon juice, lemon zest, and heavy cream until smooth. Pour over the baked crust and return to oven for 20 minutes.
  4. Cool completely, then sprinkle remaining sugar evenly over the top. Use a kitchen torch to caramelize the sugar until golden and crisp.
  5. Chill for 1 hour before cutting into bars.
