Lemon Coconut Heaven Cookies

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 2 tablespoons lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, cream together butter and sugar until light and fluffy. Beat in the egg, lemon zest, and lemon juice.
  4. Gradually mix in the dry ingredients until just combined. Fold in the shredded coconut.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
