Lazy Girl Pecan Pie Bars

Layered dessert bars with a buttery shortbread crust topped with a gooey sweet pecan pie filling, easy to make for a delicious holiday treat.

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 sticks (1 cup) butter
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed brown sugar
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl or mixer, combine flour, 1/2 cup sugar, salt, and butter until mixture is dry and crumbly.
  3. Grease a 10×15 inch pan or line with parchment paper.
  4. Press the crust mixture firmly into the bottom of the pan and bake for 10 minutes.
  5. In a separate bowl, mix eggs, corn syrup, sugars, melted butter, vanilla extract, and pecans until well combined.
  6. Remove crust from oven and immediately pour pecan filling over hot crust, spreading evenly.
  7. Bake for an additional 35 minutes at 350°F.
  8. Allow to cool before cutting and serving.

Notes

Use parchment paper for easy removal and cleanup. Press crust firmly for better structure. Bars are best served cooled to allow filling to set.
