Lazy Girl Pecan Pie Bars

Delicious layered dessert bars with a buttery shortbread-style crust and a gooey pecan pie filling baked on top, combining all the flavors of pecan pie in an easy bar form.

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 sticks (1 cup) butter
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar (firmly packed)
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans, chopped

Instructions

  1. Preheat oven to 350 degrees F. In a large bowl or mixer, combine flour, 1/2 cup sugar, salt, and 2 sticks butter. Mix until the mixture is dry and crumbly.
  2. Grease a 10×15 inch pan or line it with parchment paper. Press the crust mixture firmly into the pan to create an even crust. Bake for 10 minutes.
  3. In a separate bowl, whisk together eggs, corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and chopped pecans until well combined.
  4. Remove the crust from the oven after 10 minutes and immediately pour the pecan filling evenly over the hot crust.
  5. Return the pan to the oven and bake for 35 minutes at 350 degrees F until the filling is set and bubbly.
  6. Allow to cool completely before cutting into bars and serving.

Notes

Use parchment paper to ease removal and cleanup. Press the crust firmly for a sturdy base. Let bars cool fully for clean slicing.
