For the Crust:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1/4 cup key lime juice
- 1 tbsp key lime zest
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 cup heavy whipping cream
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F and line a muffin tin with cupcake liners.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in lime juice and zest.
- Alternate adding dry ingredients and milk to the butter mixture, mixing until just combined.
- Divide batter among cupcake liners and bake for 18-20 minutes. Cool completely.
- Beat cream cheese and powdered sugar until smooth. Whip cream to stiff peaks and fold into cream cheese mixture. Pipe onto cooled cupcakes.
