Key Lime Pie Bars

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 6 tbsp unsalted butter, melted
  • 3 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 2/3 cup key lime juice
  • 1 tbsp key lime zest

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. Crust: Mix graham cracker crumbs, sugar, and melted butter until well combined. Press evenly into the bottom of the prepared dish. Bake for 10 minutes. Cool slightly.
  3. Filling: Beat egg yolks until pale and fluffy. Gradually add condensed milk, then lime juice and zest, mixing until smooth. Pour over the crust.
  4. Bake for 15 minutes, or until the filling is set but still slightly wobbly in the center.
  5. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  6. Cut into bars and garnish with whipped cream and additional lime zest if desired before serving.
