For the Crust:
- 6 hard-boiled eggs, peeled and chopped
- 1 cup full-fat cottage cheese
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup finely chopped celery
- 2 tablespoons finely chopped red onion
- 1 tablespoon fresh dill, chopped
- Salt and black pepper to taste
- Paprika for garnish (optional)
Instructions
1. Prepare the Crust:
- Place chopped hard-boiled eggs in a medium mixing bowl.
- Add cottage cheese, mayonnaise, and Dijon mustard to the bowl.
- Gently fold in chopped celery, red onion, and fresh dill until well combined.
- Season with salt and black pepper to taste.
- Chill in the refrigerator for at least 15 minutes before serving.
- Garnish with a sprinkle of paprika if desired and serve on lettuce cups or alone.
