For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup crushed pineapple, drained
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup milk
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Alternately add dry ingredients and milk to the butter mixture, mixing until just combined.
- Fold in crushed pineapple, then pour batter into the prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
