Juicy Pineapple Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup crushed pineapple, undrained
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup pineapple juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add crushed pineapple, vegetable oil, eggs, vanilla extract, and pineapple juice. Mix until well combined.
  4. Pour batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
