For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup plain yogurt
- 1 cup fresh peaches, diced
- 1/2 cup fresh raspberries
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, cream butter, then add eggs one at a time, followed by vanilla and yogurt. Mix until smooth.
- Gradually fold dry ingredients into the wet mixture until just combined.
- Gently fold in diced peaches and raspberries, reserving a few for topping.
- Pour batter into the prepared pan and smooth the top. Scatter remaining fruit on top.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.
