Juicy Cherry Cobbler Bars

Delicious bars with a buttery crust, juicy cherry filling, and crumbly topping.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 2 cups fresh or frozen cherries, pitted
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix flour, 3/4 cup sugar, baking powder, and salt. Cut in butter until crumbly. Stir in egg to form a dough.
  3. Press 2/3 of the dough into the prepared pan. Bake for 10 minutes.
  4. Meanwhile, combine cherries, lemon juice, cornstarch, and remaining 1/4 cup sugar in a saucepan. Cook over medium heat until thickened, about 5 minutes.
  5. Spread cherry filling over the baked crust. Crumble remaining dough over the top.
  6. Bake for 25-30 minutes or until golden. Cool before cutting into bars.

Notes

You can customize the seasonings to taste.
