For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 2 cups fresh or frozen cherries, pitted
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a 9×9-inch baking pan.
- In a bowl, mix flour, 3/4 cup sugar, baking powder, and salt. Cut in butter until crumbly. Stir in egg to form a dough.
- Press 2/3 of the dough into the prepared pan. Bake for 10 minutes.
- Meanwhile, combine cherries, lemon juice, cornstarch, and remaining 1/4 cup sugar in a saucepan. Cook over medium heat until thickened, about 5 minutes.
- Spread cherry filling over the baked crust. Crumble remaining dough over the top.
- Bake for 25-30 minutes or until golden. Cool before cutting into bars.
