Jerk-Grilled Chicken with Pineapple Fried Rice

Ingredients

  • 1 teaspoon allspice
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 tablespoon coconut sugar or brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb chicken breasts
  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 3 tablespoons soy sauce
  • 1 cup finely diced pineapple
  • 1 bag Success Whole Grain Brown Rice prepared according to package instructions (about 2 cups)

Instructions

  1. Make the chicken: In a small bowl, combine allspice, chili powder, cinnamon, cloves, ginger, coconut sugar, salt, and pepper. Brush chicken breasts with 1 tablespoon olive oil and coat each on both sides with spice mix.
  2. Grill chicken over medium-high heat, turning once, until internal temperature registers 165°F, about 10 minutes. Keep chicken warm.
  3. Make the rice: Heat 1 tablespoon olive oil over medium-high heat until shimmery. Sauté onion, garlic, and 1 teaspoon ground ginger until just softened.
  4. Stir in soy sauce, pineapple, and cooked rice. Stir occasionally until lightly browned and fragrant. Season with salt and pepper to taste.
  5. Serve chicken hot with fried rice.

Notes

Use fresh pineapple for the best flavor and texture. Day-old rice works best for fried rice to avoid mushiness. Adjust spice levels to taste for more or less heat.
