- 1 teaspoon chili powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 tablespoon coconut sugar or brown sugar

- 1/2 teaspoon pepper
- 1 lb chicken breasts
- 1 tablespoon olive oil
- 1 small onion finely diced
- 2 cloves garlic minced
- 3 tablespoons soy sauce
- 1 cup finely diced pineapple
- 1 bag Success Whole Grain Brown Rice prepared according to package instructions (about 2 cups)
Instructions
- Make the chicken: In a small bowl, combine allspice, chili powder, cinnamon, cloves, ginger, coconut sugar, salt, and pepper. Brush chicken breasts with 1 tablespoon olive oil and coat each on both sides with spice mix.
- Grill chicken over medium-high heat, turning once, until internal temperature registers 165°F, about 10 minutes. Keep chicken warm.
- Make the rice: Heat 1 tablespoon olive oil over medium-high heat until shimmery. Sauté onion, garlic, and 1 teaspoon ground ginger until just softened.
- Stir in soy sauce, pineapple, and cooked rice. Stir occasionally until lightly browned and fragrant. Season with salt and pepper to taste.
- Serve chicken hot with fried rice.
Notes
Use fresh pineapple for the best flavor and texture. Day-old rice works best for fried rice to avoid mushiness. Adjust spice levels to taste for more or less heat.
