Jalapeno Cheddar Andouille Sausage Ramen

Ingredients

  • 2 tablespoons olive oil
  • ½ large onion, chopped
  • 14 ounces jalapeno cheddar andouille sausage, sliced
  • 3 cups water
  • 3 blocks ramen noodles (discard seasoning packets)
  • 1 packet Goya Sazon seasoning
  • 2 green onions, sliced
  • 12 fresh jalapenos, thinly sliced
  • 2 soft-boiled eggs (optional)

Instructions

  1. On medium-high heat, in a large skillet, sauté chopped onion and sliced jalapeno cheddar andouille sausage in olive oil until crispy around the edges, about 4-5 minutes.
  2. Carefully pour in 3 cups water (do so slowly as it is hot), add Goya Sazon seasoning, bring to a boil.
  3. Add 3 blocks ramen noodles (discard packets), turn frequently until softened and fully submerged, boil until cooked, about 3-4 minutes.
  4. Divide noodles and broth into bowls. Top each with extra sausage slices, green onions, jalapeno slices, and soft-boiled eggs if desired.

Notes

For extra heat, add cayenne pepper or spicy sesame oil. Soft-boil eggs by simmering for 6-7 minutes. Adjust water for preferred broth level.
