- 2 tablespoons olive oil
- ½ large onion, chopped
- 14 ounces jalapeno cheddar andouille sausage, sliced
- 3 cups water
- 3 blocks ramen noodles (discard seasoning packets)
- 1 packet Goya Sazon seasoning
- 2 green onions, sliced
- 1–2 fresh jalapenos, thinly sliced
- 2 soft-boiled eggs (optional)
Instructions
- On medium-high heat, in a large skillet, sauté chopped onion and sliced jalapeno cheddar andouille sausage in olive oil until crispy around the edges, about 4-5 minutes.
- Carefully pour in 3 cups water (do so slowly as it is hot), add Goya Sazon seasoning, bring to a boil.
- Add 3 blocks ramen noodles (discard packets), turn frequently until softened and fully submerged, boil until cooked, about 3-4 minutes.
- Divide noodles and broth into bowls. Top each with extra sausage slices, green onions, jalapeno slices, and soft-boiled eggs if desired.
Notes
For extra heat, add cayenne pepper or spicy sesame oil. Soft-boil eggs by simmering for 6-7 minutes. Adjust water for preferred broth level.
