Italian Cream Cheese Cake

A rich and creamy Italian-inspired cake with layers of cream cheese filling and a delicate sponge.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup buttermilk
  • 1/2 cup shredded coconut
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla and almond extracts.
  4. In a separate bowl, whisk together flour, baking powder, and baking soda.
  5. Alternately add the flour mixture and buttermilk to the creamed mixture, mixing until just combined.
  6. Fold in shredded coconut and chopped pecans.
  7. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Allow cake to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
