For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 4 large eggs
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup buttermilk
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, cream together butter, cream cheese, and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla and almond extracts.
- In a separate bowl, whisk together flour, baking powder, and baking soda.
- Alternately add the flour mixture and buttermilk to the creamed mixture, mixing until just combined.
- Fold in shredded coconut and chopped pecans.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Allow cake to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
