Irresistible Summer Peach Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 ripe peaches, peeled and diced
  • 1 tbsp cinnamon

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, mixing until just combined.
  6. Fold in diced peaches and pour batter into the prepared pan.
  7. Sprinkle cinnamon evenly over the top.
  8. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  9. Let cool before serving.
