For the Crust:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 6 small flour tortillas
- 1 egg, beaten (for sealing)
- 1/2 cup vegetable oil (for frying)
- 1/4 cup powdered sugar (for dusting)
Instructions
1. Prepare the Crust:
- In a bowl, mix cream cheese, granulated sugar, and vanilla until smooth. Fold in diced strawberries.
- Spoon 2-3 tbsp of the filling onto each tortilla. Fold sides inward, then roll tightly. Brush edges with beaten egg to seal.
- Heat oil in a skillet over medium heat. Fry chimichangas until golden brown, about 2 minutes per side. Drain on paper towels.
- Dust with powdered sugar before serving.
